Food Network Celebrity Maneet Chauhan's Cutting Edge Tours Kicks Off at NYS ProStart® School

Three top ProStart® students from New York City’s Food and Finance High School competed for top honors at the inaugural Cutting Edge Tour on April 18 at the school.
The event celebrated the release of James Beard Award-winning Food Network celebrity Maneet Chauhan’s new book, “The Flavors of My World.” A strong supporter of the ProStart Program, Chauhan worked with the New York State Restaurant Association Educational Foundation and the National Restaurant Association Educational Foundation to involve ProStart students in her book tour. The teen chefs were challenged to create a dish that represented “contemporary American cuisine” --with a food budget of $30--prepare it in 40 minutes and serve it to Chauhan and fellow judges, Marc Murphy, owner of Benchmarc Restaurants and NYSRA Board member and Doug Singer of Daily Food & Wine. Chauhan and Murphy are also judges on the Food Network’s “Chopped.”
The teen chefs’ meals were judged on originality, presentation, healthiness and flavor. Jasmine Polanco prepared sautéed tilapia with roasted fingerling potatoes and vegetables; Michael Gutierrez made glazed, marinated skirt steak with couscous salad and Cristina Cielo-Perez’ winning meal was roasted salmon with grilled asparagus and tabouli with mango, avocado and grapefruit salad. As the New York winner, Cielo-Perez received a set of Gunther Wilhelm Executive Series Knives. Her meal will be considered, along with those of other state winners, in the national championship. The winner of the national event will receive an array of prizes, including a trip to Washington DC to cook in the kitchen of the Vice President of the United States.
Elizabeth Soscia, NYSRAEF’s Education Coordinator, helped develop the template for the Challenge that will be used across the country and managed the New York event. She said the Food and Finance High School students couldn’t have represented their school, their state or the ProStart program better. “They demonstrated the skill, focus and passion that are the hallmarks of great ProStart programs, like the one at Food and Finance High School.”
The NRAEF’s ProStart program is a two-year high school curriculum that introduces young people to career opportunities in the food service industry and teaches them basic culinary arts and management skills in the classroom and in work experience. Nearly 4,000 students participate in the program in New York State.
